Aichi’s food culture is said to be unique even within Japan.
The root of these flavours can be found within “brewing culture” for things such as soy sauce, miso, or mirin.
For example, typical miso will lose its flavour if boiled, however, Aichi Prefecture’s strange yet interesting soybean miso only gains more and more flavour as it is boiled.
There are many local cuisines that use this soybean miso such as boiled udon, miso oden, miso katsu, and many more.
The people who live in Aichi Prefecture are brimming with curiosity, they enjoy mixing and matching various foods allowing for many interesting and delicious ways to eat a single meal, and they’re very good at it which creates new and interesting combinations for everyone to enjoy.
